The girls and I really love the show "The Princess and the Frog". In it, Tiana makes some "man-catchin' beignets." We thought we'd try it out. (This recipe makes a LOT. We had to take some to two different neighbors and still had way too many to eat ourselves. I'd cut it in half or even third if I do it again.)
1 1/2 cups lukewarm water
1/2 cup sugar
1 packet yeast
Mix together and let rise for 10 minutes.
In another bowl, mix
1 1/2 tsp salt
1 cup evaporated milk.
3 cups flour
Then mix in
1/4 cup shortening
4 cups flour
Spray a large bowl with Pam and put the dough in it, turning once. Cover with a towel or plastic wrap and let rise for two hours.
In a frying pan, heat oil to 350. I just did it medium-high, since I don't have a thermometer for the oil.
Brown the beignets and set them on a paper towel until they're cool enough to handle.
These are tasty treats (as long as you don't have too many...). They remind me of Utah's version of the scone. If you prefer, you can even refrigerate the dough overnight and have them for a very unhealthy breakfast!
We have yet to see whether these beignets can catch any men, since the only one around doesn't have any teeth yet. Here's hoping!
